It's very difficult to comment on demand in terms of gaps, sorry.

I was using the name UR Dog because that is what it is named on the rares list; sorry if that caused confusion. Anyway, yes, that kinda confirms my thinking on rarity, but demand...
How about this: I'm pretty sure the UR Dog has low or lower demand, correct? So how much would they have to add (if any; could be wrong) to make up for that?

The first trade is worth about a skeleton pps
The third trade you just posted would be fair without the bun on your side; it needs to be removed. Your side adds to 5 and a half sorbets while their side adds to 5 and a red x pps; again not including the bun at all

Demand wise I would say it is fair considering the UR holly doesn't have the best demand.
The UR phoenix is worth a non and a sorbet, but can tend to go more considering it has good demand. I would take that offer.
