I would cancel because we have no idea as of yet if the UR pineapple will be above or below the big gap.
Even if it is, fruits almost always have bad demand.

You really should wait until the pineapple has a spot on the list,
so cancel the trade with a message explaining you would prefer to wait until it it placed on the list.
Except it will probably have some bad demand because...
It's a fruit.

Its really between you and your partner and we really won't know the rarity for around 6-8 months if you really want to wait that long
