i'd say you are around GWJ level, Ur tess horse. 3 sorbets is worth a noncoon, so if you added say.. a gearback, you'd be on that level.

What would a full set of 2011 Arabian+Clydesdale Store horses be worth?

I used the search function and didn't get a very explicit answer for my case...

I'm really unsure, but i'd say at least some form of advent pet. Each one of them is worth an mid 09 rare i think (correct me if i'm wrong, i'm really unsure!!).

I would say an early '09 rare apiece. That's the rates I've seen, and what I paid for mine at least. So perhaps a mid Advent for the set?

I'm not really interested in Warriors or BW, so I was just curious if this BW could be used to get an '09 rare.

It means it's worth any pet with the same rarity released within three months of itself.

Generally, those '08 pets that were available for a long time are worth a mid '09 rare. You might be able to get a lower in demand dog for it, depending on who you're trading with.
