I've been to/lived in Mexico, Jordan, and the United Arab Emirates. I've stopped in a few countries on my flights, such as Canada, France, Qatar and Oman. I've been to Myrtle Beach, South Carolina and stopped in Chicago for one of my flights.

Although I don't know if I'll ever be able to, I want to visit Spain, Israel, Greece and maybe Egypt.

We talking countries or nations? There's a difference, in that nation is the whole political power and country is the identity.

If we're talking countries, I can add to my list (in order of visitation):
England
Wales
Scotland
Christiania

And... arguably? Occitan and Catalonia. Occitan is culturally distinct from the rest of France, having its own language and so on, and people being more loyal to Occitan than France, but they're not normally counted, and I don't think they have any real desire to gain political independence (probably because there's no economic power there but hey-ho).
Catalonia has however made demands for independence. There's actually a lot of tension in Catalan about being able to let a chunk of France and a chunk of Spain combine, probably not least because then Andorra would be a single town accessible by a single road entirely enclosed in a single country, where there's very low taxes on a wide variety of goods, including alcohol and tobacco, and that could cause issues...

In short? If you like being able to visit large numbers of countries, being an EU citizen is great. Too bad I only have that for as long as the EU agrees that we voted foolishly (which will probably be a long time as Brexit is objectively going terribly, no matter what you wanted from it, and I don't want it at all).
