I have no idea what I'm doing,, but I'm slowly working it out.

If someone would be able to explain how the growing up system works and what the trading up/down means that would be really helpful thanks!

Welcome to Chicken Smoothie! Since you are new, I suggest taking a look at the Newbie Guide & Index and the Must Read Topic for Newbies. Reading through them will offer great amounts of help so you can navigate your way around Chicken Smoothie.

To answer your questions, different species take different lengths of time to grow. There are some estimates given on each species' adoption page. Almost all pets will grow to adulthood within about 35 days, and most grow much faster than that. You will usually start seeing changes in most pets by the time they are about 7-14 days old.

Trading up is when you trade pets with a user and the pets they give you are worth more than the pets you give them. Trading down is the opposite, where the pets given to you by the other user are lesser in value compared to the pets you gave them!
