The secret to both is:
Use lots of layers and clipping masks! :D
I never have more than 4 layers at a time - Base, Shading and Highlights, and Lines.

I am worse at oekaki than SAI, but I do almost everything one clipping mask at a time.
I merge my layers like crazy lol
