Day 7!

Baklava

1 cup granulated sugar
3/4 cup water
1/2 cup pure honey
2 tablespoons fresh lemon juice
16 ounce package phyllo dough thawed
1 cup unsalted butter 2-sticks melted
4 cups walnuts finely chopped
1 tablespoon ground cinnamon

Instructions:

Open the phyllo pastry dough package and cover with a damp towel to prevent drying out. If needed, trim the dough to fit your glass baking dish.

Grease a 13 x 9-inch or larger glass baking dish with 1 tablespoon of the melted butter and set aside.

In a medium saucepan, combine the sugar, water, honey, and lemon juice. Bring to a boil over medium-high heat, stirring often until the sugar is dissolved. Reduce the heat to low and simmer without stirring for 4 minutes; set aside to cool.

Preheat oven to 325F degrees.

Combine the finely chopped walnuts and cinnamon in a medium bowl.

Lay 1 sheet of the phyllo dough into the bottom of the buttered dish. Brush with melted butter, then repeat with 9 more sheets of phyllo. Spread ¾ cup of the walnut mixture evenly over the phyllo layer.

Lay another 5 sheets of phyllo dough over top of the walnut mixture, brushing each with butter. Sprinkle on another ¾ cup of the walnut mixture.

Repeat until walnut mixture is used up, then top with 10 last sheets of phyllo dough, brushing butter on each as you add them.

Brush the top layer with butter, then slice the pastry into 1 1/2 inch strips and then slice diagonally in both directions to create diamonds.

Bake uncovered for 1 hour 25 minutes until pastry is golden brown.

Immediately after removing from the oven, pour the cooled syrup over the pastry.

Let cool completely or leave overnight before serving.

Then enjoy!

Day 7!
[Username]: Griff
[UID]: 254592
[Entry]:
2 cups creamy peanut butter (not “natural” peanut butter) (475g)
▢ ½ cup unsalted butter softened (113g)
▢ 2 Tablespoons light brown sugar firmly packed (see note)
▢ ¼ teaspoon salt
▢ 1 ¼ teaspoon vanilla extract
▢ 3 ¼ cups powdered sugar (405g)
▢ 2 cups semisweet chocolate chips (340g)
▢ 1 teaspoon coconut oil or vegetable shortening

Instructions

Combine peanut butter and butter in the bowl of a stand mixer and beat until well-combined.
Add brown sugar, vanilla extract, and salt. Stir well.
Gradually add powdered sugar until completely combined. Scoop into Tablespoon-sized balls and roll with the palms of your hand until smooth and round.**
Place on wax-paper lined cookie sheet and freeze for 15-20 minutes.
While peanut butter balls are chilling, combine chocolate chips and coconut oil (or vegetable shortening) and heat in the microwave in 25-second intervals (stirring well in between) until chocolate is smooth and completely melted. Pour into a deep dish (I use a wide cup).
Remove peanut butter balls from freezer, spear the top of each peanut butter ball with a toothpick and, holding the toothpick, dip each buckeye ball into the melted chocolate.
Return to cookie sheet and remove toothpick. Use the pads of your fingers to smooth over the toothpick mark.
Allow chocolate to harden before eating and enjoying (placing them in the refrigerator will speed up the process of the chocolate hardening!).

[Entry]: Turkey Wild Rice Soup

Ingredients:
    1 tbs butter
    1 cup chopped carrot
    1 cup chopped celery
    1 cup chopped onion
    1/2 cup chopped green onions
    1/4 tsp dried rosemary
    1/4 tsp dried thyme
    1/4 tsp black pepper
    3 garlic cloves, minced
    6 cups chicken broth
2 cups cooked, cubed turkey breast
    1 cup uncooked wild rice
    1/3 cup all-purpose flour
    2 cups milk
    1/2 tsp salt

1. Melt the butter in a large pot on medium-high heat. Add the carrot, celery, onion, green onion, rosemary, thyme, pepper and garlic. Sauté for about 8 minutes or until browned.
2. Stir in broth. Stir in turkey and rice; bring it to a boil. Cover, reduce heat, and simmer 1 hour and 15 minutes or until rice is tender.
3. Combine flour and milk in a small bowl, stirring with a whisk until there are no lumps. Add to soup and stir it in well.
4. Cook on medium heat until thick, stirring frequently. Season with salt, to taste.

(I make this all the time, I highly recommend it)

~Grandma's fried pies~

~ 1 tube of biscuit dough
~ Filling of choice (recommended pie filling or jam; homemade pie filling recommended because it's not as saucy)

Roll each of the biscuit doughs about 1/8 inch thick. Place dollup of filling in center leaving 1/2 inch of space at edges. Fold in half. Crimp edges with a fork.
Put generous amount of oil in a pan. Medium to high heat (closer to medium).
Place pies in pan and cook until the dough is brown.
When cooked, place pies on paper towels on a plate to soak up some of the excess oils.

Optional toppings: Powdered sugar, chocolate drizzle, ice cream or just eat it plain and simple and delicious.

<3
(This is a family favorite of ours and we generally eat them plain as they are delicious as is. We usually make homemade pie filling with apples. :3 )
