Tried my hand at imitating your style somewhat; honestly don't know if they are simple or complicated but,

Their 'hands' animate like seaweed in water and
grow like the bristles on a bristle nose pleco.
Though they are fully functioning limbs
The red color fades to black depending on temp.
They are sorta amphibious but prefer salt water(?)
Their mask grows like actual coral.
They have no definite eyes or mouth, I don't know
which ones they see/eat out of.
They like the thumbs up hand position the most?
