My main question is once a pet grows, how do I know if it's a rare color or not?

Welcome to CS!
In order to find the rarity of the pets that have grown, you will need to click on the pet. On the pet's page, it will either say "(unknown until adult)", which means that the pet will change more before becoming full grown, "Unknown", which means the rarity hasn't been released for this pet (it usually takes about a month for new pets' rariries to be released), or it will say the pet's rarity- OMG so common, common, uncommon, rare, very rare, or OMG so rare.

^adding on, there's also very common, which is rarer than OMG so common but more common than common
